Vegan fava bean kebab

This vegan kebab is made with large fava beans, potato and parsley. Shape it however you like and cook it in the oven or on the stovetop. The original recipe also uses a small piece of charcoal if you want to add a smoky grilled flavor.

Ingredients

  • 500 g large fava beans, cooked
  • 1 large onion, finely chopped
  • 1 cup parsley, finely chopped
  • 1 medium potato, boiled
  • 1/2 cup flour
  • 2 tbsp olive oil
  • 1 tbsp grill seasoning
  • 1 tsp vegetable-broth seasoning
  • 1/2 tsp black pepper
  • Salt to taste

Method

  1. Soak the large fava beans in water overnight. Change the water, then boil until tender and drain.
  2. Once the beans have cooled, process them in a food processor or another suitable machine until fairly fine while still leaving a little texture.
  3. Peel and mash the boiled potato, then add it to the coarsely processed beans.
  4. Add the parsley, onion, flour, seasonings, salt and olive oil. Knead well by hand until the mixture holds together.
  5. Shape the mixture however you like. Lightly oil your hands so the mixture does not stick and so the pieces get a thin layer of oil for grilling.
  6. Arrange the pieces on a lightly oiled baking tray.
  7. Cook them on the stovetop or in the oven. On the stovetop, turn them once the bottom browns. In the oven, use top heat after the bottoms have browned.
  8. For a smoky flavor, place a hot piece of charcoal in a small foil cup with 1 tablespoon of oil, put it with the cooked kebab, then close the container tightly for 15 minutes so the pieces absorb the grilled aroma.

Why fava-bean kebab works as a full vegan meal

Fava beans do not contain “human growth hormone,” and we do not need claims about curing anemia or cancer to make a strong case for them. They are legumes, so they bring plant protein, fiber, folate, iron and other nutrients together in the same food.

The evidence for legumes is stronger than vague health claims: a recent meta-analysis of 38 randomized trials found that whole pulses reduced LDL and non-HDL cholesterol, with broadly similar effects across different types of legumes. Source.

Instead of getting protein from meat-based kebab, here the fava beans provide protein together with fiber in the same dish. If you want to improve absorption of plant iron, include a vitamin-C source such as lemon or salad with the meal.

Important note about fava beans: people with G6PD deficiency should avoid fava/broad beans because they can trigger acute breakdown of red blood cells. This is the condition commonly known as favism. MedlinePlus / NIH.
