Vegan almond and soy labneh

This labneh combines soy yogurt and almonds. It takes a few days of draining and resting, then the labneh is rolled into balls and stored in olive oil.

Ingredients

  • 2 kg soy yogurt
  • 1 1/2 cups almonds, soaked for 6 hours and peeled
  • 1 cup water
  • Juice of 1 fresh lemon, with more if desired
  • Salt to taste
  • Olive oil for preserving the labneh balls

Method

  1. Put the soy yogurt in a labneh bag, mix in 1 tablespoon salt, and place a weight on top so the liquid drains for a full day.
  2. Soak the almonds for 6 hours. Drain them, cover with boiling water for 1 minute, then peel.
  3. Blend the peeled almonds with the water until very smooth.
  4. The next day, add the almond mixture to the soy yogurt. Adjust the salt and add the juice of half to one whole lemon, according to taste.
  5. Tie the bag again and place a suitable weight on top so the remaining liquid drains for another day. If the weather is hot, keep the bag in the refrigerator so it does not spoil.
  6. On the third day, check the salt and add a little more if needed. Shape the labneh into balls and place them on cloth in a container so the remaining moisture can drain. Cover the balls with cloth.
  7. Refrigerate for a full day.
  8. The next day, if the cloth is wet, add more layers of cloth as needed.
  9. Arrange the labneh balls in a jar, cover completely with olive oil, and refrigerate.
  10. The flavor develops after several days, and the labneh can be kept refrigerated for longer storage.

Why almond and soy make a strong combination

The full package is stronger than any treatment claim: almonds bring unsaturated fats, vitamin E and magnesium, while soy adds complete protein. The creamy texture and protein do not require dairy milk.

Claims that almonds prevent cancer spread, balance blood sugar or improve mood go beyond the evidence and are not needed here. The stronger case is already on the plate: nuts + soy, unsaturated plant fats + complete protein, without dietary cholesterol.
