Vegan sausage / Sandwich
Serves four. This recipe uses fine soy protein with pomegranate molasses and sausage spices, then turns it into an easy sandwich with pickles and vegan mayonnaise.
Ingredients
- 1 cup fine soy protein
- Vegetable broth for boiling the soy protein
- 5 tbsp vegetable oil
- 1 tsp pomegranate molasses
- 1 small tomato, grated
- 2 pickled cucumbers
- 2 tbsp sausage spice blend
- 1 tsp vegan Maggi-style seasoning
- Chili seasoning, optional
- Vegan mayonnaise, optional
- Salt
- Bread for sandwiches
Method
- Boil the soy protein in vegetable broth for 10 minutes, then drain it very well.
- Heat the oil in a non-stick pan, add the soy protein, and stir until it begins to brown.
- Add the pomegranate molasses, spices and salt.
- Once browned, add the grated small tomato and continue stirring until the excess moisture cooks away. Adjust the seasoning and salt.
- If you like, spread 1 tablespoon of vegan mayonnaise on the bread.
- Add the vegan sausage mixture, pickles and tomato slices if desired, then toast the sandwich.
Serve with crispy roasted potatoes. Enjoy 🙂
What soy protein actually offers
Soy is a complete plant protein, and there is no evidence-based reason to add a blanket “not every day” warning simply because it contains isoflavones.
A recent analysis of randomized trials found that soy protein modestly lowered LDL and total cholesterol. Soy itself contains no dietary cholesterol, so the stronger comparison is what changes when the protein source is plant-based instead of animal-based. Source.
And “plant estrogen” is not human estrogen. A meta-analysis of 41 clinical studies found no effect of soy or isoflavones on testosterone or estrogen in men, while a review of 40 randomized trials found no significant effect on the estrogen markers studied in postmenopausal women. Men, women.
