Vegan Almond Cake Ingredients
- 2 cups whole-wheat or white flour
- 1 cup finely ground almonds (the original author ground dry almonds with the skins on)
- 1 cup sugar
- A pinch of salt
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp vinegar, any type
- 1/2 cup vegetable oil
- 1½ cups plant milk, soy milk or almond milk
- 1 tsp vegetable oil + 1 tbsp flour for greasing and dusting the pan
How to Make Vegan Almond Cake
Preheat the oven to 180°C.
In a bowl, mix the flour, ground almonds, sugar and salt.
Add the baking powder, baking soda and vinegar, placing each in a separate spot before mixing.
Add the plant milk and oil and mix well until combined.
Grease the pan with the teaspoon of oil, then dust with flour, moving the pan until the flour sticks to the oil. Shake out any excess flour.
Pour in the batter, place the pan in the center of the oven and bake with heat from below.
Bake for 40–45 minutes, or until a toothpick inserted near the center comes out without wet batter attached. Then brown the top briefly.
Remove from the oven and leave to cool before turning it out. You can add fruit or vegan cream if you like.
Enjoy.
Almonds in Cake: A Real Nutritional Benefit
Almonds are not just flavor; they have measurable effects on blood lipids. A recent meta-analysis covering 36 studies and 2,485 participants found that almond intake reduced LDL, total cholesterol, non-HDL cholesterol and ApoB, all important cardiovascular risk markers. Source.
Almonds also add unsaturated fats, fiber, plant protein, vitamin E and magnesium. Even dessert can be vegan and bring real nutrients with it, without eggs or animal milk.
