Vegan Almond Milk Custard Ingredients
- 2 cups almond milk, or any plant milk. The original author used homemade almond milk made from peeled almonds and did not strain it, only blended it very smoothly, which made the custard richer and creamier.
- 2 tbsp custard powder, making sure it contains no egg
- 1 tbsp sugar or another sweetener, with more if you prefer it sweeter
How to Make Vegan Almond Milk Custard
Put the almond milk on the stove and bring it to a boil. Add the tablespoon of sugar and keep stirring over low heat.
Mix the 2 tablespoons of custard powder with a little cold water until fully dissolved.
When the almond milk boils, add the dissolved custard while whisking continuously so it does not form lumps.
Continue simmering over low heat while stirring so it does not stick, for about 2 minutes or until the mixture becomes thick.
Pour immediately into serving bowls before it sets. You can pour half the mixture first, then mix 1 tablespoon cocoa into the other half for a chocolate layer. You can also place biscuits in the bottom of the bowl before pouring in the custard.

Almond milk can contribute unsaturated fats, vitamin E and magnesium, and fortified versions can also provide calcium and vitamin D. Homemade versions vary depending on how much almond remains in the final drink.
