A simple vegan crepe made with plant milk and molasses instead of sugar, filled with vegan date chocolate, fruit and nuts.
Ingredients
- 1 cup white or whole-wheat flour
- 1 cup plant milk, such as almond milk
- 1 tbsp grape molasses or another syrup used instead of sugar
- 1 tsp baking powder
- 2 tbsp oil
- A pinch of salt
- Spreadable vegan chocolate
Method
- Mix all the dry ingredients together.
- Put the plant milk in a blender, add the molasses, oil and dry ingredients, then blend until smooth. The batter should remain pourable.
- Lightly oil a non-stick pan and place it over the heat.
- Once hot, pour in one ladleful and swirl the pan so the batter forms a thin circle.
- Brown the crepe on both sides over medium heat. Repeat until all the batter is used.
- Place the crepes on a cloth or suitable paper to cool, or fill them immediately with vegan date chocolate, fruit and nuts, then fold like a sandwich.

Vegan crepes—not medicine disguised as dessert 😄
There is no need to turn a crepe into a treatment for anemia, rheumatism, cancer or childbirth. Those claims go far beyond the evidence, especially the idea that dates contain a “pitocin hormone.”
Dates are a fruit containing natural sugars, fiber, potassium, magnesium and phenolic compounds. There are interesting human studies, but a review of the clinical trials concluded that many of the medical claims around dates still need stronger trials. Review.
The vegan case here is simpler and more enjoyable: you can make crepes, chocolate and a complete dessert without eggs or cow’s milk. If you choose whole-grain flour and fill the crepes with fruit, nuts and date chocolate, you also add more fiber and nutrients than a version made only from white flour and sugar.
Not every vegan recipe has to be a “treatment.” Sometimes the real win is making a delicious dessert without an animal paying the price. 🌱
