I tried this oat-based vegan cheese with walnuts, but you can make it without the walnuts too.

Vegan Oat Cheese Ingredients
- 1/2 cup rolled oats
- A few walnuts, optional
- 2 tbsp nutritional yeast, if available
- 1 cup water
- 2 tbsp apple-cider vinegar
- 2 tbsp cornstarch
- 3 tbsp olive oil
- 1 tsp salt, or to taste
- A pinch of onion powder

How to Make Oat Cheese
Put the 1/2 cup rolled oats, the optional walnuts and 1 cup water in a blender and blend until very smooth.
Strain the oat milk thoroughly through a suitable cloth.
If you end up with less than 1 cup of liquid, add water to bring it back to 1 cup.
Return the strained milk to the blender. Add 2 tablespoons apple-cider vinegar, 1 teaspoon salt or to taste, a pinch of onion powder, 2 tablespoons nutritional yeast, 2 tablespoons cornstarch and 3 tablespoons olive oil. Blend well until homogeneous.
Pour the mixture into a pan over low heat, stirring so it does not stick, for about 5 minutes or until it thickens well. Transfer quickly to a suitable container; the original author used a glass container greased with a little oil. Let it cool, then refrigerate for 4 hours so it becomes easier to grate and slice. You can also use it immediately while it is still hot and fluid.
Enjoy.
Why Oat Cheese Has a Real Nutritional Advantage
Oats measurably lower LDL: an analysis of randomized trials found that around 3 grams per day of oat beta-glucan lowers LDL and total cholesterol. Source.
A broader review also found improvements in LDL and several cardiovascular markers with oat intake. Review.
The contrast is simple: cheese made from oats and walnuts can contain fiber and beta-glucan, while dairy cheese contains no fiber at all.
